View Full Version : Hot and spicy pineapple upside down cake.

Cake mix of your choice.
Pineapple slices in real juice.
1/2 cup sugar
Heaping table spoon of ground Ginger.
1/4 teaspoon or more ground red pepper.
1 tablespoon real butter.

Prepare pineapple upside down cake as normal except save all the juice in the can for the next step.

In a sauce pan heat the pineapple juice, sugar, butter, ginger and ground red pepper to a soft sirup stage. Best done in an all metal pan with a metal spoon. A soft sirup stage is when you lift the spoon out it's coated. What tries to drip off will clump up at the edge of the spoon and form a thick string.

Wile the cake is still warm coat the top of it with the soft sirup. I did this as soon as I took the cake out of the oven. Helped the sirup spread easily.
