I don't have one at hand but I remenber on Paula Deans show she made some pb cookies in a snap.
It seemed real simple without even using any flour as an ingredient.
I think it was like 1 cup peanut butter + some butter I believe and maybe a tat of baking soda added? I think it was only like 3 ingredients in the whole shabang! Anyone see or heard of doing this PB cookie recipe ?

Unfortunately I don't have the recipes on hand, but my brother gets mad at me if I don't make thumbprint cookies (the traditional ones.) I also love to make gingersnaps. DH always insists on peanut butter cookies. My grandmother used to make an icebox cookie that was sooo good. Don't know how to make it but it had a cinnamon taste. She's been passed for years now, so I can't get the recipe.

lets see if any of these sound like what your grandma use to make.
Vanilla nut icebox cookies
coconut icebox cookies
almond icebox cookies
and were they, bars and squares, drop, rolled and sliced,or shaped cookies?
I also have foreign cookie recipes.
digbugsgirl

I know they were slice cookies. I'm thinking they may have had almonds. Can't quite remember. I know if I tasted them I would definitely know. :) The vanilla nut could be it. Could you pass along the recipe?
Thanks!

peanut butter cookies Mmmm
Pepermint Kisses (pepermint merangues)

The exact recipe doesn't matter but if you roll out some gingerbread cookie dough and mold it over a stainless steel bowl, cut some shapes out of the side with a cookie cutter and bake it (still on the bowl) you get a really cool centerpiece or gift vessel. I make one every year and everyone loves it.

Favorite, you ask....How in the world am I supposed to pick?
http://i10.photobucket.com/albums/a148/daboes/DSC_1079.jpg
Personally I've always liked the peanut cookies and apple crisps, but the strawberry cheesecake cookies are pretty darn good(3rd from right, 2nd row back). Women, almost unanimously, like the almond Kifli(sp)(3rd from right, 3rd row back).
Biggest pain in the butt - Stained Glass cookies, they probably won't make the cut next year.
:littlepresent: Also, Here is a tip to perfect cookie baking we discovered this year if your recipe calls for margarine. We usually use just any old margarine, like cheapest or whats on sale, but found out this year that "Imperial Margarine" performed flawlessly. We thought that it was just that we were having a good year of baking but a half a dozen people confirmed that the Imperial Margarine will make you a master baker! I don't why it works but we're sold on it, it also has slightly less transfats than other margarine.

Thanks Sickie, Actually it took three lonnngg days about 14 hours each just because we're way behind schedule this year. Last year I counted how many there were based on the recipes. A total of 2300 cookies in all and a total cost of about $225. But they would fill about 35-40 medium size tins so they make cheap presents that taste great.

Ok. I need your help.
My mother used to make a "cookie" but when i asked her about it she doesn't remember what was in it. It was like a chocolate log that had different colored mini marshmallows in it and was rolled in graham cracker and coconut. I could probably figure it out if I had any idea of how to make a chocolate log. They didn't have to be refridgerated either once they set up the first time.
Mom always called them Stained Glass Cookies and said it came from her mother.

Your not going to get opium from the seeds they sell in stores. LOL
Because I cant each chocolate I make the recipe off of the package and replace the chocolate with nuts. Almond and black walnut are the best! Toast the nuts in butter before adding em to the cookie dough. Also adding a bit of extract helps too.
One that I've made for years is an old recipe out of a cook book my mom got as a wedding gift. It's a roll out sugar cookie dough for shapes. Have to find that recipe and post it.
Then there's Almond Biscotti, almond and orange biscotti, orange biscotti, plain biscotti, walnut biscotti, cinnamon biscotti, chocolate chip biscotti, chocolate chip and orange biscotti ( got to make em for folks ) and did I mention biscotti? LOL takes hours to make but worth every minute! No idea where that recipe is at now. Hopefully I'll find when I'm off in a few weeks.
Then there's Scottish short bread. Basically butter held together with powdered sugar and a pinch of flour. LOL

I found two recipes for Eggnog cookies on Allrecipes.com. Suggestions made about recipe Number 1 (decreasing the spices and increasing the eggnog), have already been revised by me here. Here they are
Eggnog Cookies I
Ingredients
• 1 1/4 cups white sugar
• 3/4 cup butter, softened
• 3/4 cup eggnog
• 1 teaspoon vanilla extract or rum extract
• 2 egg yolks
• 1/4 teaspoon ground nutmeg
• 2 1/2 cups all-purpose flour
• 1 teaspoon baking powder
• 1/4 teaspoon ground cinnamon
Directions
1. Preheat oven to 300 degrees F (150 degrees C).
2. Combine flour, baking powder, cinnamon and nutmeg.
3. Cream sugar and butter until light. Add eggnog, vanilla, and egg yolks; beat at medium speed with mixer until smooth. Add flour mixture and beat at low speed until just combined. Do not overmix.
4. Drop by teaspoonfuls onto ungreased cookie sheet 1 inch apart. Sprinkle lightly with nutmeg. Bake 20 to 23 minutes until bottoms turn light brown.
Eggnog Cookies II
Ingredients
• 1 cup margarine
• 1 cup white sugar
• 1 egg
• 1 cup eggnog
• 3 1/4 cups all-purpose flour
• 1 teaspoon baking powder
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1 1/2 cups confectioners' sugar
• 3 tablespoons eggnog
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
2. In a medium bowl, cream together the margarine and white sugar until smooth. Stir in the egg and 1 cup eggnog. Combine the flour, baking powder, baking soda and salt; stir into the sugar mixture so it is well blended. Drop by rounded spoonfuls onto the prepared cookie sheet. Drop by rounded spoonfuls onto the prepared cookie sheets.
3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
4. To prepare the icing, put the confectioners' sugar into a small bowl. Stir in the remaining eggnog one tablespoon at a time until the desired consistency is reached. Spread onto cooled cookies and let dry before serving.

My Godmother would make 7 different kinds of cookies every year. Sugar cookies, peanut butter balls, French cookies, butter cookies, Russian tea cakes, ricotta cheese cookies and Italian cookies. I grew up, my entire life having these cookies. My family actually had a tradition of having them for breakfast on Christmas morning with a nice hot cup of coffee. Sadly, this year will be the 3rd Christmas without them :( My Godparents no longer speak to anyone in the family (long story). And of course, she has all the recipes. Some of these cookies were easy to find on the web. But of all the searching I've done, I still cannot find the ricotta cheese cookies and the beloved Italian cookies. I've found recipes for Italian fig cookies, but they just don't seem close enough to my Godmother's. They were a rolled up cookie with filling. I remember her putting all kinds of dried fruits through a meat grinder. Pretty sure she also added ground maraschino cherries and ground walnuts to the filling. She would roll out the dough and spread the dried fruit filling on it, then roll it up (jelly roll style). She would also brush the logs with an egg wash and sprinkle with colored sugars or nonpereils. After baking and cooling off a bit, she would slice the logs. My family misses these cookies so much. They're so much more than just a cookie. It's a treasured memory for us. If anyone has any idea of what I'm talking about, please share. You would be my Christmas angel :)

I make these every year and send them and give them out to friends and family. Tehey take a couple days to make because you have to refrigerate the dough the yeast dough the night before. My kids loved making them. It's been a tradition for years. They are great with coffee or milk on xmas morning. Pop em in the microwave to warm them up. I cut the sugar down a little because the recipe is a little too sweet. I mail them out frozen so that by xmas time they're perfect. I guess I'm up to twelve batches every year.

Favourite cookie? Ummm....yes! I'll try them all. But seriously, I suppose my all-time fav are iced butter cookies. You can colour the icing and decorate them according to season and boy, are they ever good. A close second are chocolate refrigerator cookies. My late mother used to make them a lot. I haven't made since my kids grew up and flew the nest.
